So what do parents of 8 children do on a Saturday night with not a single child in sight?
Why they feast on delicious spicy Thai food, that's what!
With all 7 children off on various sleep overs and play dates, I nestled into my knitting while Brendan cozied up to the stove top and even the grill while making a batch of Thai Grilled Chicken for us.
And oh what a feast it was!
Check out this pummelo salad (Yam Som-O) that he made as a side dish, it was by far the best thing I have had in a long long time. In fact I would gladly take it as an entree any day of the week.
So there you have it, the exciting things that parents do when their kids aren't looking....
